• I had the pleasure of interviewing six talented Canadian chefs and a mixologist, both from Canada and abroad, about their favourite Italian ingredients. What makes this story fun is not just the well-known and loved go-to ingredients but also the innovative ways that these creative members of the hospitality industry utilize them to craft something extraordinary and delicious.  

 

Essentials: Rolling with it (Fall 2025) pp 14-15

• I was tasked to investigate pasta machines for the Essentials column. Naturally, I knew just the person to turn to for expert advice: Leandro Baldassarre. I reached out to the talented pastaio, and he was incredibly generous with his time and knowledge, providing valuable insights and recommendations for both amateur and serious pasta enthusiasts.
